In a study published in the February issue of the International Journal of Cancer, researchers found that participants who consumed the most foods high in fiber had about half the risk of developing cancer than participants who consumed the least amount. The study included nearly 3,000 hospital patients, 1,000 of whom had cancers of the mouth, throat or esophagus. Both insoluble fiber, found in seed and fruit skins, and soluble fiber, found in oatmeal and fruit, helped to lower the risk of oral, pharyngeal and esophageal cancers.
It is unclear exactly how fiber helps to lower the risk of cancer; however, researchers speculate that consuming foods high in fiber may limit the amount of insulin that is released into the bloodstream. Excess insulin is believed to cause proteins in the blood (known as insulin growth factors), which may increase the risk of some types of cancer. Fiber also contains antioxidants, which may help to clear cancer-causing elements from the bloodstream.
